Sweet and Sour Pineapple Ribs

· 5 racks baby back ribs, cut into two ribs per portion · 3 cups barbecue sauce · 3 cups pineapple juice · 1/2 cup brown sugar · 1 tbsp dry mustard · 1 green pepper, cut into chunks · 1/2 Spanish onion, cut into strips · 2-3 ribs celery, cut into chunks · 1/2 fresh pineapple, cut into chunks


Add 1 cup water to ribs in a baking pan. Cover with foil and bake one and a half hours at 350 degrees F. Remove ribs from the oven. Drain and dispose of liquid. In a mixing bowl, combine barbecue sauce, pineapple juice and brown sugar. Stir until sugar is combined. Add the rest of the ingredients to the barbecue sauce mixture and stir to combine. Add the ribs to the mixture and stir to coat well. Pour entire mixture back into baking pan and cover with foil. Bake for one and a half hours at 350 F degrees. Serve.
